One of the key advantages to the system is the self-limiting nature of the time-temperature effect of Lactoperoxidase. As described in the Codex Alimentarius Commission (CAC) guideline the effect is limited to 7-8 hrs at an ambient temperature of 30C. As always milk to be consumed fresh should be pasteurised. Raw milk which has been treated with LP-s can be used for further processing once the time temperature relationship as defined in the guideline are adhered to.
