The objective of the project was the introduction of technology for small-scale milk preservation and cheese-making, including on-farm cottage cheese-making, and the improved handling of unprocessed milk; the establishment of a cadre of trained persons in milk preservation, milk processing and cheese-making; the assessment of the socio-economic aspects of the technology and its impact.
