Agrifood Quality is a set of characteristics which must be fulfilled to satisfy consumers. One of the main properties of quality is safety, that is produce, stock, transport and offer the final consumer with products which are safe both for human and animal health. Livestock based certifiable food quality systems fall under this innocuousness’ concept.
The new reality of markets is based in a true concern about innocuousness; it is not enough to offer low cost products, it is also necessary to count with a controlled safety and source of origin.
FAO as lead agency of the Codex Alimentarius jointly with WHO, is in charge of promoting its adoption in the livestock sector. Through the Regional Office for Latin America and the Caribbean takes part in the evaluations and studies of national and regional projects related to food quality and safety both for human and animal consumption, as well as in the support to the cooperation networks between public and private sectors, preparation of trainers for commercial livestock production, and counseling on legal, administrative and operational regulations to monitor production, storage and distribution of livestock products, with emphasis on quality and safety of products.
