Canavalia ensiformis, a tropical legume, is a potential source of protein for non-ruminant animals. C. ensiformis beans contain about 30% protein (N X 6.25) and average 2000 kg dry beans per hectare. Antinutritional factors in the unprocessed beans, which are toxic to non-rumiant animals, include the lectins concanavalin A and B, the amino acids canavanine and canaline, and the enzyme urease. Autoclaving at 120øC for 90 min or storage during 10 days at pH 8:0 decreased toxicity, allowing use of up to 15% and 10% of C. ensiformis meal in broiler and laying hen diets, respectively.
