| Decanting milk from
shepherds into churns at the milk plant. A mini modern dairy plant set
up privately guarantees the survival of many traditional herdsmen in Mauritania.
This is one of the few, if not the only, plant that pasturizes camel (dromedary)
milk and produces various types of camel's cheese. The project provides
technical assistance and subsidizes the machinery needed for pasturization
