Codex has developed Principles and Guidelines for the conduct of Microbiological Risk Assessment (1999) [pdf 23kb]. To compliment and supplement these guidelines FAO/WHO are developing guidelines on each of the components of the risk assessment process. These guidelines, aim to promote the development and application of Microbiological Risk Assessment as a valuable tool in food safety decision making are intended for a multidisciplinary audience, involved in developing, reviewing, or using microbiological risk assessment documents at international or national level. They will also be of use to risk managers who base their decisions on the risk assessment results, and need to be aware of the underlying principles and methodology.
