Trypsin inhibitors and phytohaemagglutinin activities in raw and autoclaved beans and peas consumed in Kenya.

Of four Phaseolus vulgaris varieties analysed, Mwezi Moja showed the lowest trypsin inhibitor activity in raw and autoclaved beans and the greatest degree of destruction of activity on autoclaving (71%). Canadian Wonder showed the lowest phytohaemagglutinin activity in raw beans; all varieties showed zero activity on autoclaving.
