PREPARATION OF THIS DOCUMENT

This document contains papers presented at the Symposium on post-harvest fish technology which was held on 21 and 22 October 1990 in Cairo, Egypt, in conjunction with the Eighth Session of the Committee for Inland Fisheries of Africa (CIFA). The proceedings have been edited by the Technical Secretary of the Symposium. The findings, conclusions and recommendations with respect to the Symposium are included in the Report of the Eighth Session of CIFA (FAO Fisheries Report No. 448).

It has always been a tradition to organize a symposium in conjunction with meetings of the Committee for Inland Fisheries of Africa (CIFA). Earlier symposia have been held as follows:

PREPARATION DE CE DOCUMENT

Ce document comprend les exposés présentés lors du Colloque sur la technologie du poisson après capture, qui a eu lieu au Caire, Egypte, les 21 et 22 octobre 1990, à l'occasion de la Huitième Session du Comité des pêches continentales pour l'Afrique (CPCA). Le compte rendu a été mis au point par le Secrétaire technique du Colloque. Les observations, conclusions et recommandations du Colloque sont inclues dans le rapport de la Huitième Session du CPCA (FAO Rapport sur les pêches No 448).

Il a toujours été de tradition d'organiser des collogues à l'occasion des réunions du CPCA. Les thèmes des autres colloques ont été:

ABSTRACT

A Symposium on Post-Harvest Fish Technology was held on 21 and 22 October 1990 in Cairo, Egypt, in conjunction with the Eighth Session of the Committee for Inland Fisheries of Africa (CIFA). The Symposium reviewed the present state of post-harvest fish technology with special reference to inland fisheries in Africa which are generally traditional, small-scale fisheries. It also reviewed the possibilities and constraints with regard to improving the role of the inland fisheries post-harvest sector in generating income and in providing food. Review papers are included on the kinds and levels of post-harvest losses, on traditional and modern post-harvest technologies, on the present and potential role of inland fish in income generation and in food consumption. Papers also include country overviews and specific topics such as utilization of certain species, packaging, marketing and credit.

RESUME

Un Colloque sur la technologie du poisson après capture a eu lieu les 21 et 22 octobre 1990 au Caire, Egypte, à l'occasion de la Huitième Session du Comité des pêches continentales pour l'Afrique (CPCA). Le Colloque a passé en revue la situation actuelle en ce qui concerne la technologie du poisson post-capture dans la pêche continentale en Afrique, une pêche généralement traditionnelle à petite échelle. On a également discuté des possibilités et contraintes concernant l'amélioration du rôle du secteur post-capture de la pêche continentale en Afrique dans la production de revenus et l'approvisionnement alimentaire. Le document comprend des exposés sur les genres et niveaux des pertes post-capture, sur les technologies traditionnelles et modernes, et sur le rôle actuel et potentiel des poissons d'eau douce dans la production de revenus et dans l'approvisionnement alimentaire. Sont également inclues des études générales de certains pays, et de thèmes spécifiques comme l'utilisation de certaines espèces, l'emballage, la commercialisation et le crédit.
