Supply of milk and milk products in large urban areas

As urban populations find it increasingly difficult to acquire milk and milk products, many countries urgently need to streamline their milk delivery channels to major consumer centres. The cost of milk production in developing countries is often competitive with that found in developed countries, however, because of the low volumes delivered and inadequate mill collection and processing facilities, locally produced mill costs more than its imported equivalent. Improved dairy technology is therefore required in order to preserve milk and milk product hygiene and nutritional quality at lower cost. The FAO Dairy Development Group suggests approaches that are calculated to provide small rural dairy farmers with an acceptable income while offering low- and middle-income urban dwellers sufficient supplies of wholesome and hygienic milk products.
