Mandat:(a) Élaborer des spécifications fondamentales d'hygiène alimentaire applicables à tous les aliments;
(b) examiner, amender le cas échéant et confirmer les spécifications d'hygiène préparées par des comités du Codex s'occupant de produits et contenues dans des normes Codex visant des produits; et
(c) examiner, amender le cas échéant et confirmer les spécifications d'hygiène préparées par des comités du Codex s'occupant de produits et contenues dans des codes d'usages du Codex, sauf cas particuliers pour lesquels la Commission en a décidé autrement, ou
(d) élaborer des dispositions sur l'hygiène applicables à des aliments déterminés ou à des groupes d'aliments, qu'ils relèvent du mandat d'un comité du Codex ou non.
(e) examiner des problèmes d'hygiène spécifiques soumis par la Commission ;
(f) suggérer et hiérarchiser les domaines dans lesquels il convient de procéder à une évaluation des risques microbiologiques au niveau international et de définir les questions que les responsables de l’évaluation des risques doivent aborde ; et,
(g) examiner les questions liées à la gestion des risques microbiologiques en relation à l’hygiène alimentaire et aux activités de la FAO et de l’OMS en matière d’évaluation des risques microbiologiques.

(Le terme "hygiène" peut englober, éventuellement, les spécifications microbiologiques applicables aux aliments et les méthodes qui y sont associées).
