Comité del Codex sobre Higiene de los Alimentos (CCFH)

Mandato:(a) Redactar disposiciones básicas sobre higiene de los alimentos aplicables a todos los alimentos ;
(b) examinar, enmendar si es necesario, y ratificar las disposiciones sobre higiene preparadas por los Comités del Codex, que figuran en las normas del Codex para productos, y
(c) examinar, enmendar si es necesario, y ratificar las disposiciones sobre higiene preparadas por los Comités del Codex, que figuran en los códigos de prácticas del Codex, a no ser que la Comisión haya decidido otra cosa en casos específicos, o
(d) redactar disposiciones sobre higiene aplicables a determinados productos alimenticios o grupos de alimentos, independientemente de que correspondan o no al mandato de un Comité del Codex.
(e) examinar problemas específicos de higiene que le encomiende la Comisión.
(f) proponer y catalogar por orden de prioridad las áreas en las que es necesario efectuar una evaluación de riesgos microbiológicos en el plano internacional y definir las cuestiones que los encargados de la evaluación de riesgos deben tratar;
(g) examinar las cuestiones de gestión de riesgos microbiológicos en relación con la higiene de los alimentos y con las actividades de evaluación de riesgos microbiológicos de la FAO y la OMS.

(El término "higiene" incluye, según sea necesario, especificaciones microbiológicas para alimentos y la metodología correspondiente).
