Asian Institute of Technology students summarise their work in World Food Safety Day video

The students and staff of the Food Engineering and Bioprocess Technology (FEBT) and Food Innovation, Nutrition and Health (FINH) programme at the Asian Institute of Technology (AIT) in Bangkok have produced a video to mark World Food Safety Day, which offers a summary of the food safety-related work they have done over the last year.

In the video, Professor Anil Kumar Anal says that food safety is everyone’s responsibility and should be the utmost priority for a sustainable and healthier society. “Foodborne illness is preventable with good science and the adoption of a proper strategy,” he said, “and thus, our aim is to generate effective technologies and to build the capable human resources for safer food produce and supply.”

The video portrays students conducting their studies and research in the laboratories of AIT. The students cover subjects such as food safety standardizations, risk management and traceability systems and the role of probiotics in food safety applications, and research topics include the detection of pathogenic microbes in fresh food samples and the identification of antimicrobial resistant genes using polymerase chain reaction (PCR) technology.

Students and staff of the department have had numerous articles published in journals such as Food Control, Future Foods, the Journal of Food Safety and others.
