Bhuna Kichuri

Ingredients

pepper, chili: 4
water: 4 1/2 29
bay laurel: 4
cinnamon: 4 45
coriander: 1 27
ginger: 1 27

Steps
1. Roast mongo beans in a heavy frying pan for a few minutes.
2. Let it cool. Wash rice and mongo together and let stand in a strainer.
3. In another pan, heat oil and saute half of onions until golden brown and crisp. Remove from oil and drain on paper towel.
4. To oil in pan, add the rest of onions and all spices except green chilies. Saute for 2-3 mn.
5. Add rice and mongo, and fry for about 5 mn more. Add water.
6. When mixture boils, reduce heat and cook until grains are done. Add green chilies and half of fried onions. Stir carefully.
7. Keep covered for at least half an hour before serving. Garnish with the rest of fried onions.
8. Serve with vegetables, any beef or chicken curry, salad, and pickle.
