Lebanese Bread

Ingredients
water: 2 1/2 29
sugar: 1 31
flour, wheat:
salt, table: 2 31
yeast: 1 27
oil, cooking/salad: 2 27

Steps
1. Dissolve yeast and sugar in 1 cup warm water; let stand for about 5 mn. Mix flour, salt, and oil in a large bowl. Add yeast mixture. Add remaining warm water, mix well, and knead for at least 15 minutes until smooth.
2. Put in warm, oiled bowl, turning dough over to coat surface with oil. Cover bowl with dry cloth. Put in place to rise until double, about 2 hours.
3. Punch dough down. Make a big ball, then cut into 4 pieces. On a lightly floured board, roll out with rolling pin to make it thin. Cut out circles with a small cup.
4. Place on dry cloth and let rise in a warm place for 1 hour.
5. Bake 6-8 minutes in a preheated baking sheet, at 500 degrees F.
