Soybean Soup with Malunggay

Ingredients

soya, beans: 1 cup
onions: 3 tablespoon
beans, kidney: 1/3 cup
pork: 1/2 cup
salt, table: 1 teaspoon
winter squash: 1/3 cup
sauce, patis:
oil, cooking/salad: 4 tablespoon
malunggay, leaves: 1 cup

Steps

1. Soak soybeans in water overnight. Drain off water for 5 mn and fry until golden brown.
2. Boil soybeans in water for 45 mn. Drain (use drained water for soup stock) and remove bean coat.
3. Saute onion in oil. Add the stock and pork, and season with fish sauce. Boil until pork is tender.
4. Add string beans and soybeans. Simmer for 5 mn. Add squash and salt, then cook for 8 mn. Add malunggay leaves and cook for another 2 mn. Serve hot.
