Chemical composition of leaf protein concentrates from tropical legumes and leaves of forest

Leaf protein concentrate (LPC) was prepared by wet fractionation from the tropical
legumes Canavalia ensiformis, C. gladiata, Glycine wightii and Stizolobium sp., and the trees
Eucalyptus saligna and Lecytis pisonis. One part of leaves was extracted with 2 parts medium
(1% sulphite, pH 6 for legumes, pH 6 or 9 for L. pisonis and pH 11 for E. saligna). Legume
LPC was precipitated by heat (80øC) or ethanol and tree LPC by ethanol or at pH 3 or pH 5.
LPC was dried at 60ø and had moisture 4.1 to 11.6, crude protein 6.9 to 52.4, crude ether
extract 7.3 to 24.6, ash 3.9 to 20.0, crude fibre 0.4 to 4.7 and tannic acid equivalent 3.5 to
17.2%.
