At least 500 000 children go
partially or totally blind each year because of Vitamin A
deficiency. Affordable, small-scale technologies for
preserving
vitamin-rich fruits and vegetables can help combat
micronutrient deficiencies by ensuring an adequate diet
throughout the year.
