During the identification stages, many agricultural systems have been identified, and have met the criteria for Globally Important Agricultural Heritage Systems. Some of these systems have been listed as candidate system for GIAHS recognition.
Mesoamerica
Mesoamerica is one of the primary hearts of crop domestication and agricultural evolution. Mesoamerican culture is considered heterogeneous and being in a permanent exchange with neighbouring cultural areas such as the Greater Southwest or the Circum Caribbean Area. Nevertheless and in spite of its linguistic and cultural plurality, Mesoamerica can be defined as a region unified by common historic and cultural features, among them: cultivation of maize with the uictli (planting/digging stick, span. coa), certain irrigation techniques (Chinampas, dam building), maize (prepared with lime or ashes), beans (frijoles, squash, amaranth (huauhtli), chía, cotton for clothing, consumption of cacao and alcohol production of maguey agaves (Span. pulque, Nah. octli).
