ABSTRACT
The consumption of mutton and lamb in the observed period 1991-1996 per household member in Yugoslavia was 1.68 kg on the average and it was characterized by a declining trend. This consumption can be described as relatively low in comparison with the mutton and lamb in other European countries.
The differences in the consumption of these products per socio-economic categories of households are evident, which are conditioned by numerous factors.
Agricultural households have the biggest consumption of 3.53 kg (which is increasing), and account for 7.8 percent in of all meat consumption.
Mixed households, with the average consumption of 2.40 kg, comprise 5.6 percent of all meat consumption
Non - agricultural households have not only the smallest consumption of 1.20 kg, but are also characterized by a high rate of decline. Negative changes in the consumption of mutton and lamb in non-agricultural households are the consequence of the purchased quantities and much more intensive reaction to the consumption of this meat.
According to the trends shown within the research period, no expansion in the mutton and lamb consumption can be expected in the future.
