Codex Alimentarius

Purpose:

Create or strengthen the Codex National Committees and technical subcommittees of Costa Rica, El Salvador, Guatemala, Honduras, Nicaragua, Panama and Dominican Republic, ensuring the exercise of their counseling functions to the respective Governments in issues related to food safety based in the recommendations of the Codex Alimentarius Commission and the requirements of the World Trade Organization (WTO) Agreements on Sanitary and Phitosanitary Measures (SPM) and Technical Barriers to Trade (TBT). Facilitate the application of Codex standards, guidelines and recommendations in the countries of the subregion.

Results:

  • Better understanding of CODEX and the role of the Codex National Committee by the government, industry, consumers and universities.
  • Creation or strengthening of the Codex National Committee and technical subcommittees. Establishment of a Codex information and dissemination system.
  • Plan of Action for the application of Codex recommendations in the control of priority products for domestic consumption and export.
  • Instruction of 56 trainers in the following issues:
    • Food legislation and harmonization of standards.
    • Application of Good Manufacturing Practice (GMP) and the Hazard Analysis Critical Control Point (HACCP) System.
    • Codex criteria on the establishment of maximum limits for additives, contaminants and pesticide and veterinary drugs residues in food.
    • Codex Guidelines on formulation, evaluation and accreditation of Food Import and Export Inspection and Certification systems
  • Training of 560 professionals, in above mentioned issues.

ACTIVITIES, REPORTS AND DOCUMENTS

In the framework of Project TPC/RLA/0065 subregional and national activities are carried out in the fields of Codex management, domestic food legislation and its comparison with Codex standards, the application of the good manufacturing practice and the hazard analysis critical control point system, the maximum limit for additives, contaminants, pesticides and veterinary drugs, and the food import and export inspection and certification systems.
