The populations of many food-insecure
countries are predominantly rural. However, urbanization takes place at
a rapid pace in developing countries, and more than 60 million inhabitants
are added every year to cities and towns. The consequences of rural to
urban migration are of concern in many countries. The transformation of
production, processing, marketing, transportation and distribution induced
by rapid urbanization represents a major challenge for the entire food
