UHT (ultra-high temperature)
treatment of milk and liquid milk products is the application of heat to a continuously flowing product using such high temperatures for such time that renders the product commercially sterile at the time of processing. When the UHT treatment is combined with aseptic packaging, it results in a commercially sterile product. (Codex Alimentarius)
Procédé UHT (ultra-haute température)
procédé thermique appliqué au lait et aux produits laitiers de boisson en mouvement constant, à de très hautes températures pendant une brève période de temps pour rendre le produit stérile au niveau du commerce pendant la transformation. La combinaison de l’application d’un traitement UHT et d’un conditionnement aseptique permet d’obtenir un produit commercial stérile. (Codex Alimentarius)
Tratamiento UHT (temperatura ultra alta)
aplicación de calor a un producto en flujo continuo, empleando temperaturas suficientemente altas por el tiempo necesario para que el producto resulte comercialmente estéril en el momento de la elaboración. Combinando el tratamiento UHT con el envasado aséptico se obtiene un producto comercialmente estéril.
