It all started in Kadoorie nearly thirty years ago, where Danny Barzilai oversaw the local sheep industry. Later this developed into a cheese-making hobby at home. On trips to Europe, Danny visited villages in Italy, Switzerland, France and Holland, exchanging tips and recipes with them. Danny, who for years raised flocks of sheep and goats, chose to start something new in the field of cheese production and opened Hanoked Dairy Farm in the communal settlement of Gilon, in northern Israel.

He wanted to go by the book, so he studied in France, visited dairy farms around the world and learned how to go about making cheese.
