What is the Codex Alimentarius?

The Codex Alimentarius, or "Food Code" is a collection of standards, guidelines and codes of practice adopted by the Codex Alimentarius Commission. The Commission, also known as CAC, is the central part of the Joint FAO/WHO Food Standards Programme and was established by FAO and WHO to protect consumer health and promote fair practices in food trade. This timely new compendium of Codex texts to support countries in the fight against foodborne antimicrobial resistance (AMR) brings together more than a decade of Codex work on the topic and illustrates how fundamental approaches like Risk Analysis and One Health are to addressing complex issue such as that posed by foodborne antimicrobial resistance.

 

In addition to being a convenient reference for food safety professionals, this publication represents in a very tangible way the vision of a suite of Codex texts to address foodborne AMR.  From integrated monitoring and surveillance as inputs to risk assessment to risk management and risk communication, it covers the cycle of risk analysis for foodborne AMR.
