Technology associated with wholesale markets can assist in maintaining product quality and facilitate market access and trade thus reducing food loss and waste (FLW).

In developing countries, there is a lack of transparency in terms of information flow. Prices are negotiated based on market power of certain groups of traders rather than driven by market fundamentals. In developed markets, fish prices are freely set by the market based on supply and demand. Producers are market oriented and information flows more easily among all the actors. Introduction of modern technology in developed country fish markets, such as an electronic auction system, allows producers to sell products from different places to many buyers in a short time, which builds more trust between sellers and buyers. Some of these factors have major influences on the performance of the fish distribution channel in developing and developed countries. The use of technology has been one of the major factors in the development of the fish marketing system in developed countries.

Cold Chain Management and Utilization of Ice

Chilling using ice prolongs the shelf-life of fish by slowing the action of enzymes, bacteria, and the chemical and physical processes that can affect quality. Fresh fish is an extremely perishable food and deteriorates very rapidly at normal temperatures. Reducing the temperature at which the fish is kept lowers the rate of deterioration. 

The ice store should, at least, have the capacity to handle quantities sufficient for two days of ice production. The capacity of the chilled room for storage of iced fish should be calculated based on the expected market turnover. At a minimum, a capacity to store the average daily throughput of the fish landing facility should be provided; additional capacity would be needed if it is planned to operate a collection system.

Flake ice machines are compact and are available in a variety of sizes and production capacities to meet ice demand. They are a good option for wholesale markets and traders.
