This guidance document introduces the concept of veterinary drug residue risk assessment, with a specific focus on the approach used by the Joint FAO/WHO Expert Committee on Food Additives (JECFA).

The use of veterinary drugs in food-producing animals can leave residues that may pose a risk to consumers when they consume animal-derived food products. A rigorous scientific assessment can help mitigate these risks while facilitating the international trade of animal-derived food products.
