This guide proposes the methodologies of the IUFN and the Gironde Departmental Council (France) for the construction of territorial food systems at the level of local authorities. The IUFN's "project" methodology is based on an inventory of fixtures co-constructed and shared with all the actors of the local food system. Starting from the analysis of the territorial agricultural and food reality, the aim is to set objectives and a common vision of the desired food system and to organize a territorial governance to support it. For its part, the "lab" of the Gironde Departmental Council is based on a "backcasting" methodology. The aim is to bring territories to project themselves into a desired future, which becomes the starting point for reflection on a new territorial project. This method emphasizes awareness and sensitization on food and agricultural issues.
