Pulses offer several benefits, from improving human health to strengthening soil ecosystems; thus deserving a central place in modern, healthy and sustainable diets. This year’s celebration, under the theme “Pulses of the world: from modesty to excellence,” highlights the much-needed transformation to take these seeds of humble origins to global recognition for their flavor, nutritional value and culinary innovation.
