Markets for Processing Plants
Processors are often powerful players in the food sector, particularly in more developed economies. A significant proportion of fish and seafood is processed in factories. A significant amount of factory processed fish and products in developing countries is exported.
Market related solutions to fish waste from a UK study include: use rejected fish, such as those of the wrong size, in alternative products such as fish cakes. Small processors and those in remote locations could benefit from collaborative programmes designed to optimize collection or exploit market opportunities. Modify packaging to enhance shelf life. This may include variations in modified atmosphere or use of vacuum packaging.
For example, a study of fish waste in the US proposes that seafood should be packaged into smaller portion sizes for consumers as a way of reducing waste.
New product pathways could be developed by building on export markets for by-products, such as fish heads, or the wider use of fish frames as flavouring where these offer economic benefits compared with fish-meal processing.
