NOTIFICATION OF A SKILLS COMPETITION AMONG KINDERGARTEN AND SECONDARY SCHOOL NUTRITIONISTS AND CHEFS   

THEME: ADVANCEMENT IN NEW CRAFTING RECIPES AND COOKING TECHNOLOGIES FOR DISHES UTILIZING OFFAL MEAT

Within the framework of the European Union funded “SDG-Aligned Budgeting to Transform Employment in Mongolia” project UNJP/MON/022/UND, a range of initiatives is underway to enhance the offal meat value chain in Mongolia. These activities focus on promoting awareness of the nutritional and economic value of offal meat, with the ultimate goal of increasing its consumption. In this context, a competition is being announced for school and kindergarten chefs in the Ulaanbaatar city, challenging them to devise innovative recipes and culinary techniques centered around offal meat.

1. The objective of the competition

The objective of the competition is to mitigate micronutrient deficiencies and enhance the nutritional quality of children's food by incorporating offal meat. The aim is to broaden the range of age-appropriate and physiologically suitable foods for children, while also elevating the qualifications of nutritionists and chefs in general education schools, kindergartens, as well as among catering and service professionals.

1. The scope

Nutritionist and chefs of public and private secondary schools and kindergartens in Ulaanbaatar.

1. Organisation of the competition

The competition, jointly organised by FAO, the Ministry of Education and Science, the General Directorate of Education and the School of Industrial Technology of MUST, will take place in two phases.

Stage I: Entries to the competition will be a collaborative effort between school nutritionists and chefs, with each team allowed to submit up to 3 types of recipes and technologies. Entries that meet the following general requirements will be accepted until 5pm on 30 January 2024.

• Written and video instructions for preparing dishes made using offal meat that meet the nutritional needs of kindergarten and school children, including calculations of ingredients prices and nutrient content.
• Clearly state the participant's name, work address and contact telephone number.
• Submissions should be sent to the United Nations Building, Sukhbaatar District, 1st Quarter, 14 United Nations Street, Ulaanbaatar 14201, Mongolia. [email protected]

Stage II: 25 participants will be selected based on the scores of the judges who evaluated the works submitted in the first stage. The chosen participants will engage in competition in Ulaanbaatar on February 20, 2024, at the main building of MUST.
