Services & Infrastructure for Artisanal Fish Smoking
In order to maximize the benefits of appropriate technology, smoked fish processors require access to good services and infrastructure, such as a potable water supply and facilities that allow Good Hygienic Practices (GHP). The control of post processing loss and waste will be aided by access to properly designed and managed storage and market facilities.
Services and infrastructure which facilitate good handling and quality maintenance of fresh fish before processing, such as good landing and port facilities, will help fishers provide quality fresh fish. This in turn can lead to the production of good quality smoked fish that are less prone to breakage.
Improved technology, such as FTT Thiaroye kilns, may be beyond the investment capabilities of some potential end-users. Improved smoking kilns provide better process control reducing the food loss and waste (FLW) caused by burning. Government and other service providers, such as donors and NGOs, should consider investment in technology and facilities with a view to these being hired out to processors.
Investment in improved technologies will also be facilitated by good access for processors to affordable credit and savings schemes such as revolving loans.
