These manuals provide a concise and detailed methodology of how to process fruit and vegetables in a processing enterprise and provide for quality assurance. The manuals also provide for how to management the processing enterprise from a business perspective. The manuals are not training manuals per se, but (have and) can effectively be used as training aids to set up training programmes dedicated to appropriate processing methods and techniques as well as business management concerns for enterprises. The manuals have been used extensively in developing processing enterprises in food value chains.
