Betina Tito, a fish processor with a 26-year career behind her, radiates energy as she moves between racks of fish, a solar tent and an oven, making sure her day’s production runs smoothly. She left school at 16 and ever since has dried sardines and sprat and smoked perch in Kigoma by Lake Tanganyika in the United Republic of Tanzania.
