Observadores del Codex

El mandato del Codex se basa en los valores fundamentales de colaboración, integración, creación de consenso y transparencia. Tanto las organizaciones gubernamentales y no gubernamentales como las públicas y privadas desempeñan una función esencial para asegurar que los textos del Codex sean de la máxima calidad y tengan una sólida base científica. 

El Codex  tendría muy poca autoridad en el ámbito del establecimiento de normas internacionales si no acogiera con agrado y reconociera las valiosas contribuciones de los observadores. Órganos técnicos de expertos, la industria y asociaciones de consumidores contribuyen al proceso de establecimiento de normas con un espíritu abierto y de colaboración y transparencia.
 
Las organizaciones intergubernamentales y las organizaciones no gubernamentales internacionales pueden solicitar que se les conceda la calidad de observador en el Codex con el objetivo de participar y presentar sus puntos de vista en todas las etapas del proceso de establecimiento de normas.

Actualmente, la Comisión del Codex Alimentarius está integrada por: 211 Observadores del Codex: 48 organizaciones intergubernamentales, 147 organizaciones no gubernamentales y 16 organismos de las Naciones Unidas.
