El Comité Coordinador del Codex para América Latina y el Caribe (CCLAC) fue establecido por la Comisión del Codex Alimentarius en 1974. Su primera reunión se celebró en Roma en 1976, con la participación de ocho países de la región. En su tercera reunión, se propuso un cambio de nombre para reflejar con mayor precisión la composición regional, adoptando su denominación actual. Esta propuesta fue aprobada por el Comité Ejecutivo en 1984. Actualmente, 33 países de la región participan del Comité.
Uruguay, a través del Ministerio de Industria, Energía y Minería, coordina el Comité del Codex para la región de América Latina y el Caribe. Desde este rol, promueve la participación inclusiva y sostenida de los países de la región en los trabajos del Codex, fomentando el diálogo técnico, la cooperación regional y la construcción de consensos.
En línea con los objetivos de los planes estratégicos del Codex, incluyendo- - los períodos 2020–2025 y 2026–2031, Uruguay colabora activamente para alcanzar las metas regionales. Esto se logra mediante el fortalecimiento de capacidades, la promoción del uso de los textos del Codex, el apoyo técnico a los países miembros y la articulación con organizaciones internacionales. Además, Uruguay impulsa el abordaje de desafíos emergentes en inocuidad y calidad de los alimentos, promoviendo enfoques integradores como “Una sola salud” y una participación más efectiva de los países en desarrollo en la Comisión y sus órganos auxiliares.
In a 3-hour event at the Technological University of Panama (La Universidad Tecnológica de Panamá, UTP Panama) on 13 June, the Consumer Protection and Defense of Competition Authority (Autoridad de Protección al Consumidor y Defensa de la Competencia, ACODECO), the Ministry of Health (MINSA), the National Association of Poultry Farmers of Panama (Asociación Nacional de Avicultores de Panamà, ANAVIP), the Pan American Health Organization (PAHO) and the Chamber of Commerce all celebrated World Food Safety Day.

In Colombia, students studying food safety at the Fundación Universitaria Agraria commemorated World Food Safety Day over the course of May and June, attending lectures and taking part in a food safety quiz. With the message that food standards play a key role in any production process, the Ecuadorian packaging company FESA held a World Food Safety Day event for its staff on 7 June.
Staff were invited to a food safety talk at the facility and a raffle was held where a number of employees won products produced by FESA customers.
