El Comité Coordinador del Codex para América Latina y el Caribe (CCLAC) fue establecido por la Comisión del Codex Alimentarius en 1974. Su primera reunión se celebró en Roma en 1976, con la participación de ocho países de la región. En su tercera reunión, se propuso un cambio de nombre para reflejar con mayor precisión la composición regional, adoptando su denominación actual. Esta propuesta fue aprobada por el Comité Ejecutivo en 1984. Actualmente, 33 países de la región participan del Comité.
Uruguay, a través del Ministerio de Industria, Energía y Minería, coordina el Comité del Codex para la región de América Latina y el Caribe. Desde este rol, promueve la participación inclusiva y sostenida de los países de la región en los trabajos del Codex, fomentando el diálogo técnico, la cooperación regional y la construcción de consensos.
En línea con los objetivos de los planes estratégicos del Codex, incluyendo- - los períodos 2020–2025 y 2026–2031, Uruguay colabora activamente para alcanzar las metas regionales. Esto se logra mediante el fortalecimiento de capacidades, la promoción del uso de los textos del Codex, el apoyo técnico a los países miembros y la articulación con organizaciones internacionales. Además, Uruguay impulsa el abordaje de desafíos emergentes en inocuidad y calidad de los alimentos, promoviendo enfoques integradores como “Una sola salud” y una participación más efectiva de los países en desarrollo en la Comisión y sus órganos auxiliares.
