El Comité Coordinador del Codex para América Latina y el Caribe (CCLAC) fue establecido por la Comisión del Codex Alimentarius en 1974. Su primera reunión se celebró en Roma en 1976, con la participación de ocho países de la región. En su tercera reunión, se propuso un cambio de nombre para reflejar con mayor precisión la composición regional, adoptando su denominación actual. Esta propuesta fue aprobada por el Comité Ejecutivo en 1984. Actualmente, 33 países de la región participan del Comité.
Uruguay, a través del Ministerio de Industria, Energía y Minería, coordina el Comité del Codex para la región de América Latina y el Caribe. Desde este rol, promueve la participación inclusiva y sostenida de los países de la región en los trabajos del Codex, fomentando el diálogo técnico, la cooperación regional y la construcción de consensos.
En línea con los objetivos de los planes estratégicos del Codex, incluyendo- - los períodos 2020–2025 y 2026–2031, Uruguay colabora activamente para alcanzar las metas regionales. Esto se logra mediante el fortalecimiento de capacidades, la promoción del uso de los textos del Codex, el apoyo técnico a los países miembros y la articulación con organizaciones internacionales. Además, Uruguay impulsa el abordaje de desafíos emergentes en inocuidad y calidad de los alimentos, promoviendo enfoques integradores como “Una sola salud” y una participación más efectiva de los países en desarrollo en la Comisión y sus órganos auxiliares.
Codex Members of the Latin America and the Caribbean region met in Panama City on 11 November 2018 to discuss the draft Codex Strategic Plan (2020-2025). Earlier this year, the Codex Secretariat launched a series of workshops in the six Codex regions that are having a direct impact on the operational capacity of countries to engage in the standard-setting process. More participants are now expressing national positions via the Online Commenting System (OCS) and the Digital platform for Electronic Working Groups.

Constanza Vergara and Claudio Canales of the Chilean Codex Committee (ACHIPIA) used a methodology that combines science with creativity to build the capacity of food safety risk managers and communicators to analyse risks in a workshop on 28-30 August in Santo Domingo. Contaminants are substances that have not been intentionally added to food. They can occur naturally and enter the food while a crop is growing. They can form during manufacturing, handling, storage, processing or distribution. Or they can enter the food from the environment, through our water, the air or soil.
