Dr Emilio Esteban has been involved in Codex for a long time, having chaired the Codex Committee on Food Hygiene (CCFH) for many years. In a recent video interview with him, he explained why, although he has now been promoted to Under Secretary for Food Safety of the United States Department of Agriculture, Codex will remain an important part of his work.

In the interview, he also talks about the legacy he leaves to his CCFH successor, Dr Evelyne Mbandi, and what Codex needs to do to stay relevant.

As he says, one thing he is sure of is that “regardless of what I do, as long as I’m in food safety, I will be in some way related to the Codex standards.”
